I haven't tried this, just received it this morning from a friend, but I probably will try it this weekend.

Weekend Breakfast Burritos
While the burritos bake, melting the yummy cheese, you'll have time to brew coffee, pour juice--or read the paper and relax.
Ingredients:
1 tablespoon margarine or butter
8 eggs, beaten
1/4 teaspoon pepper
2 cups diced Canadian bacon
6 (8-inch) flour tortillas
6 oz. (1 1/2 cups) shredded Cheddar cheese
Preparation Directions:
1. Heat oven to 400°F. Melt margarine in large skillet over medium-high heat. Add eggs, pepper and bacon; cook and stir about 5 minutes or until eggs are firm but moist.
2. Spoon egg mixture evenly onto each tortilla. Top each with 1 tablespoon cheese. Roll up tortillas tightly. Place, seam side down, in ungreased 13x9-inch (3-quart) baking dish. Sprinkle remaining cheese over tortillas.
3. Bake at 400°F. for 10 to 15 minutes or until cheese is melted. If desired, serve with sour cream and salsa.
