    Stuffed Peppers

    1 pound ground beef
    1 cup chopped onion
    1 clove garlic, minced
    2 teaspoons chili powder
    1 teaspoon salt
    1/2 teaspoon fresh ground black pepper
    2 cans condensed tomato soup
    1/2 pound shredded, sharp cheddar cheese
    1 & 1/2 cups cooked rice
    8 medium green peppers (can use red)

    Cook the ground beef, onion and garlic until browned. Drain the oil.
    Add the tomato soup and seasonings and simmer, covered for 10 minutes.
    Add the cheese and stir until cheese is melted.
    Stir in the cooked rice. Set aside to cool.

    COre & clean the peppers and drop in salted water until barely tender, about 3 minutes. Drain.

    Lightly spray a muffin tin.

    Stand the peppers upright in the muffin tin and stuff.

    Bake in a preheated 350 degree oven for about 20 minutes.
