    Another recipe I got off the foodnetwork, I don't remember who cooked it??

    Crunchy Parmesan Chicken Tenders

    4 tablespoons olive oil
    1 cup buttermilk
    1 1/2 pounds chicken tender ( about 18 pieces) of course I have found out it all depends on how large the chicken tenders are!!
    1 cup freshly grated parmesan
    1 cup italian style seasoned breadcrumbs
    Pre-heat oven to 500 degrees, I found that was a little to hot for me, so I pre-heat to 475.

    Marinate chicken in buttermilk for about 15 - 30 minutes. Brush olive oil on baking sheet or spray cooking spray. I do neither, I just line my baking sheet with parchment paper, works fine.
    Stir breadcrumbs and parmesan cheese together in a pie dish. Remove chicken from buttermilk, and dredge in crumb mixture. Coat completely, pressing to adhere. Put chicken on prepared baking sheet, spacing evenly. Drizzle the remaining olive oil, about 2 tablespoon full, over the chicken tenders and bake until crisp and golden brown for about 12 minutes. I always turn the chicken half way through baking time. By turning I mean I turn the chicken pieces over, not just turn the baking sheet. I hope I make that clear. They are delicious and also good cold the next day. Smile Also great with a dipping sauce of your choice.
