Chicken A La King
3 small cans or jars mushrooms (sliced, or pieces and stems)
1 1/2 sticks butter or margarine
2/3 cups flour
2 cups chicken broth
3 cups milk
1 large jar pimentos (chopped)
salt to taste
1/4 teaspoon pepper
4 cups cooked chicken
frozen peas (optional)
Cook drained mushrooms in butter or margarine for 5 minutes. Add flour and stir well until smooth. Add broth and milk, stir until consistancy is right. Add more milk if too thick. Add remaining ingredients and simmer 10 minutes. Serve over mashed potatoes or toast.
