Shrimp Caroline
1 ½ - 2 lbs shrimp, unshelled
1 eight oz bottle of Italian Dressing (can be lite or fat free)\1 lemon
1 stick butter/margarine (not lite)
Pepper, garlic powder to taste
Melt butter and mix with dressing, lemon juice and seasonings. Put shrimp in 9x13 pan and pour dressing mixture on top of shrimp. Bake at 350 degrees for about 20 minutes or until shrimp is pink and opaque. Serve over rice. I use “Minute Rice” type.
Makes 6-8 servings.
