    Chicken Enchiladas

    Dump into crockpot-

    chicken breast, boneless, skinless (1 package)

    water, about 1 to 2 inches over chicken

    3 to 4 chicken boullion cubes

    1 packet taco seasoning or enchilada seasoning

    2 can chopped green chilies

    onion, chopped

    Cook in crockpot until chicken falls apart. remove with slotted spoon (shred with 2 forks) add another can of green chilis in chicken mixture.roll in floyr tortillias with shredded cheese. place in greased casserole dish and pour canned green chili sauce or red enchilada sauce over. cover completely,bake 350 degrees for 30 to 40 minutes, until hot.

    I made this a few months ago.....outstanding!!!! :) Someday I will post pics...

    make sure to try Bean's red sauce:

    Bean's Enchilada Sauce:

    1 15 ounce can tomato sauce
    1/2 t. garlic, crushed
    1/4 t. basil
    1 t. paprika
    1/4 t. cumin
    1 t. cilantro (parsley?)
    1 t. cayenne pepper
    2 t. hot chili powder
    few dashes black pepper
    2 cups chicken broth

    Heat to a boil, simmer 20 minutes.

    This is great on any Mexican food.

            This looks great, we love Enchilada around here I'm going to try this one this weekend. Thanks for posting it.

                  Yummmmmmmm

                  Bean I made your enchilada sauce and can tell you one thing ...it is even good with just a tad of rosemary in it, LOL I accidently put some in and scooped out most of it...hubby got me a spice thing and I put every darn labled lid on WRONG! I will always make my sauce this way from now on, it sure is a welcome change as to how I have always made mine and easier. I always put oil in skillet then browned chili powder other seasonings then added tomato sauce/paste and broth....

                  KEEPER RECIPE!

                  Editing to add I used the parsley instead of cilantro and added afew dashes of Franks also.

                    Don't you just love cooking mistakes that turn out? :)

                    I just can't substitute parsley for cilantro - not in my Mexican. ;) LOL :D
