    Had to try my new bottle out Frank's Chili 'n Lime Sauce..looked at Frank's site and thought chicken sounded good, but DH really likes a sauce or salsa on his chicken. Came up with this.. with what I had in the frig. Would add some jalapenos next time.

    Chili 'n Lime Chicken with CHipotle cream sauce

    For chicken:
    1 lb. chicken breasts, boned
    1/2 cup Franks Chili 'n Lime Hot Sauce

    Pour hot sauce over chicken breasts and marinate in frig. (web-site says 30 mins.. I did it for 1 hour.. more is better).

    Prepare grill (I used grill top on stove) and grill about 12 mins. turning and basting with additional sauce. (not the stuff you marinaded the chicken in).

    Chipotle cream sauce

    2 t. butter
    1/2 cup onions, minced
    2 t. garlic, minced
    1/4 cup green pepper, minced
    1/2 t. ground cumin
    2 t. chipotle chiles in adobo, minced
    1 cup heavy cream
    1 cup grated pepper jack cheese
    1/4 cup fresh salsa (drained).. (not the bottled stuff.. but the kind that you find in the deli case.. I use Santa Barabara.. or if you make it fresh.. use this)

    Melt butter in sauce pan. Add onions and saute.
    Add garlic, green peppers and saute.
    Add cumin and chipotle (I used about 2 t. of the sauce also)
    Add 1/4 cup fresh salsa (drained.. don't want too much juice)
    When all mixed together, lower heat and add cream.
    Reduce until thickened.
    Add grated pepper jack cheese. Salt and pepper to taste.
    (Can keep warm on low heat, stirring occasionally)

    Serve sauce over chicken.

    I would add to this if I had it some chopped cilantro and some jalapenos. (Bean!!)

    Served this with spanish rice.

    As for a vegies, I would have loved to had some sauted zucchini. (But we were vegie-less)
