DH LOVES this recipe and asks for it on lazy Sundays!
2 tablespoons butter
2 tablespoons olive oil
1 onion - chopped
3lbs chicken thighs and/or legs
2 cups chicken broth
2 carrots - peeled and chopped
2 stalks celery - chopped
1 tablespoon minced flatleaf parsley
1 teaspoon black pepper
salt to taste
***dumpling recipe to follow below***
1. In a large pan, brown onion in butter and oil until tender. Brown chicken
parts and place in a 6qt. crockpot.
2. Add remaining ingredients and cook on HIGH 2½ - 3 hours, or LOW 5-7
hours.
3. After cooking for appropriate time, remove chicken parts and let cool,
then de-bone. DO NOT TURN CROCK POT OFF.
4. While chicken is cooling, prepare the dumplings:
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
2 eggs
1 cup buttermilk
5. Sift all the dry ingredients.
6. Beat eggs and milk . Slowly add sifted ingredients to egg/milk mixture.
7. Add de-boned chicken meat into crockpot.
8. Drop tablespoons of dumpling dough into hot broth - enough to cover the
top of the crock. Cook dumplings until done and no longer "doughy"
MY LORD, WAS IT GREAT!!!! dh told me that if I didn't add this to my monthly meals , he'd divorce me. OH MAN was he impressed. THANK YOU THANK YOU THANK YOU!!!!!!
