    King Ranch Chicken

    3 lb. chicken, cooked, boned and cut up ( I usually just cook some boneless, skinless chicken breast, when I am really in a hurry or lazy, I just buy a rotisserie grilled chicken from the Deli !)
    1/2 cup chopped onion
    1/2 cup chopped celery
    1 Tbsp. butter
    1 can cream of chicken soup ( I buy the low fat version)
    1 can golden mushroom soup
    1 can Rotel tomatoes and green chilies
    1 8 oz can of diced tomatoes
    1 tsp salt
    1 dozen corn tortillas
    1/2 lb. grated cheese ( I buy the already grated cheese in a bag ( mexican cheeses) at the store. )

    Cook the chicken, let it cool, remove meat from bones and cut up meat. In skillet, saute onions and celery in butter. Add soups,tomatoes and salt. Heat well. Line 13x9 inch dish with tortillas which have been soaked in chicken broth. I dont' do that. I just heat my tortillas on low heat in the microwave, just so they become soft. I find that if I heat them up in the broth , they become mushy! Arrange ingredients as follows: Tortillas ( you may have to cut them to fit the dish), chicken, soup mixture and cheese; repeat. Bake at 350 degrees for 30 minutes or until bubbly. If cheese browns to much, cover lightly with foil until heated through.
    This is a standby and favorite dish with my family, ENJOY!
