Shrimp Creole
½ Cup minced onion
2 tablespoons flour
1 Bay Leaf – crushed
1/4 Cup diced celery
1 teaspoon minced green pepper
1 teaspoon minced parsley
½ teaspoon salt
1 6 oz Can Tomato Paste
1 Can Stewed Tomatoes
2 Cups cooked Shrimp
Optional:
Dash of Cayenne pepper
¼ teaspoon Pepper Sauce
Cook onions in 2 tablespoons butter until yellow. Blend in flour, bay leaf, celery, parsley, green peppers, salt, tomato paste and stewed tomatoes. Cook slowly, about 30 minutes, stirring occasionally. Then stir in 2 cups cooked shrimp. Serve over Rice or noodles.
