    Mexican Bubble Pizza

    Prep time 15 minutes (Ready in 50 minutes)

    1 1/2 lb. lean ground beef
    1 pkg taco seasoning mix
    1 can ready to serve tomato soup
    **(I replaced the taco seasoning mix and tomato soup with a 15 oz can of enchilada sauce)**
    1 can Pillsbury Grandís Corn Biscuits or Buttermilk Biscuits
    8 oz shredded cheddar cheese
    Shredded lettuce
    Tomatoes, chopped
    Salsa (I used my "Homemade" salsa)
    Sour Cream
    Onion chopped
    Heat oven to 375. Brown beef until thoroughly cooked. Drain. Add taco mix and soup (enchilada sauce for me); mix well. Bring to a boil. Reduce heat to low; simmer 3 minutes.
    Separate dough into 8 biscuits. Cut each biscuit into 8 pieces. Add pieces to ground beef mixture; stir GENTLY. Spoon mixture into ungreased 13 x 9" pan.
    Bake at 375 for 18-23 minutes or until sauce is bubbly and biscuits are golden brown.
    Remove from oven. Sprinkle with cheese and return to oven; bake an additional 8-10 minutes or until cheese is bubbly.
    Cut pizza into 8 squares. Top each with lettuce, tomatoes, salsa, sour cream and onions.
    8 servings.
