I know a lot of you have your own recipe for these, but I got a recipe book from Wal-Mart for some reason and tried these and they were great!
Sour Cream Chicken Enchiladas
1 can cream of chicken soup
8 oz. sour cream
2 cups cooked, chopped chicken
1 can Ro-Tel
1/8 to 1/4 t. ground red pepper
8 flour tortillas, warmed
8 oz. shredded cheddar cheese
Preheat oven to 350. Coat 13X9 dish with Pam; set aside. Combine soup and sour cream in bowl; stir to mix well. Spread 1/2 cup mixture evenly in bottom of dish.
Combine chicken, Ro-Tel and red pepper in bowl; stir to mix. Spoon about 1/3 cup of chicken mixture down each tortilla; top with 2 T. of cheese. Roll up and place seam side down in prepared dish.
Spoon remaiing soup mixture over enchiladas; sprinkle with remaining cheese. Bake uncovered until sauce bubbles and enchiladas are heated through, 25 to 30 minutes.
