Quick Breakfast Casserole
(This recipe yields 6 servings) Printable Version
4 slices sourdough bread
4 eggs
1/4 cup milk
one pound breakfast sausage
2 cups shredded cheddar cheese
In rectangular casserole dish, spray with vegetable spray, then line bottom with sourdough bread slices. In skillet, crumble and brown sausage, then pour over bread. In a bowl, beat eggs and milk together, then pour over sausage. Top with cheese and bake at 350 F until cheese is melted and egg done to desired firmness

Cut a whole in middle of the bread.
Put margarine in fry pan.
Put in bread.
Drop egg in middle of bread.
Cook by flipping until your eggs are cooked like you like.
These are also sometimes known as "One-Eyed Sailors".
Breakfast Spaghetti
12 ounces cooked and drained spaghetti
8 thick slices bacon - diced
2 small onions - chopped
4 large eggs
4 ounces processed cheese food like Velveeta - cubed
In a large skillet, cook the bacon and remove to a paper towel-lined plate. Add the onion to the bacon drippings and cook until onion pieces become translucent (about 5 minutes). Add the spaghetti and the bacon to the onions and toss until well mixed. Add the eggs and the cheese and stir until the cheese is melted. Serve while warm.
