This I made up some years ago. It’s not the prettiest of foods, but boy is it good! LOL
Use this for burritos, taco pizza, tacos or enchiladas w/enchilada sauce.
Bean’s Mexican Meat Mixture
1 package lentils, rinsed
1 can Rotel
1 t. Cajun seasoning
S & P to taste
3 cloves garlic, crushed
1 to 2 cans green chiles, chopped
Cook lentils in water, drain and add the above ingredients. While simmering - Brown 1 lb. ground beef and make with 1 packet taco seasoning; add to lentil mixture. Simmer 1 to 2 hours.
*Check for seasoning after simmering, you may want to add more.
