Crockpot jambalaya

Prep time...20 minutes
Cook time...4-6 or 8 hours

2 large onions chopped
2 medium green peppers chopped
5 stalks celery chopped
2 cans(28 oz each) of diced tomatoes, undrained
4 cups chopped, cooked, smoked sausage(I used andouille)
2 Tbsp. parsley flakes
1 Tsp. dried thyme leaves
½ Tsp. pepper
½ Tsp. red pepper sauce(I used tobasco)
1 pound uncooked, peeled & deveined shrimp

Hot cooked rice

Mix all ingredients(except shrimp & rice) in Crockpot.
Cover & cook on low for 8 hours or high for 4-6 hours.
Stir in shrimp. Cover & cook on low heat setting for about
1 hour or until shrimp are pink & firm. Serve with rice
