I tried this recipe last night and it was a big hit with the family. It was posted by flagirl on the forums as prevention.com
SOUTHWESTERN CHICKEN
4 bonless chicken breast halves, butterflied
2 roma tomatoes, sliced
4 jalapeno peppers, sliced
1 pkg. dry light Ranch-style dressing mix
2 c. shrededd low-fat Colby-Monterey Jack cheese
8 slices bacon
Preheat oven to 350 degrees.
Lay the chicken breasts out flat and sprinkle with the Ranch dressing mix. Sprinkle a bit of cheese onto each breast. Place 2 tomato slices and the sliced jalapeno pepper onto each one, sprinkle with more cheese. Fold each piece of chicken over and wrap with 2 slices of bacon. Secure with toothpicks. Place wrapped chicken into a baking dish and cover with alumunum foil.
Bake for 1 hour or until the chickin is no longer pink and the juices run clear. I took the foil off during the last 20 minutes of baking to let the chicken brown alittle.
