I've made these for many years for parties and recently subbed finely crushed pork rinds for the bread crumbs it originally called for. Tastes great & didn't notice any difference! (You can also use chicken tenders in place of wings, for less hassle with bones.) I used fitday.com to calculate the carb count. Enjoy!

PARMESAN-MUSTARD CHICKEN WINGS
1 stick (1/2 c.) unsalted butter, melted
2 TBS. Dijon mustard
1/8 tsp. cayenne
1 cup crushed pork rinds
1/2 cup grated Parmesan cheese
1 tsp. ground cumin
20 chicken wings, tips cut off & discarded, wings halved at joints
In shallow bowl whisk together butter, mustard and cayenne. In another bowl or dish combine wel the breadcrumbs, Parmesan, cumin and salt and pepper to taste. Dip chicken wings in butter mixture, coat with crumbs and arrange, without touching each other, in shallow greased baking pan or sheet. Bake at 425 degrees for 20 minutes, turn wings and bake 10 minutes more or til crispy. Serves 6 to 8 as appetizer.
