Honeyed Chicken Wings
3 lbs. chicken wings or chicken drummettes
Salt and pepper to taste
1 cup honey
1/2 cup soy sauce
2 T. vegetable oil
1/4 c. tomato catsup
1/2 clove garlic, minced
Cut off and discard wing tips. Cut each wing into 2 pieces at joint. (Usse drummettes if you prefer). Season with salt and pepper; set aside. Combine remaining ingredients in a saucepan and mix well. Cook for 15 minutes over moderate heat. (It will become frothy and thick.) Place wings in a shallow casserole dish. Pour 1/2 of the sauce over them and marinate for approximately 1 hour. Bake at 375 for 1 hour, basting with the remaining sauce until chicken is well done and sauce is caramelized.
