I made these Sunday for brunch and everyone loved it! Served it with creole hash potatoes, fresh fruit, biscuits, homemade rolls, Fruit and bloody mary's,
1/2 pound seasoned pork sausage
12 eggs
1/2 cup chopped onions, fine
1/4 cup chopped green & red bell pepper
1/2 t. kosher or sea salt
1/4 t. fresh ground black pepper
1/4 t. garlic powder
1/2 cup shredded sharp cheddar cheese (white is good)
PREHEAT over to 350 degrees
Brown the sausage well, and then drain the fat.
Beat the eggs and then add the onion, bell pepper, satl & pepper and gralic powder.
Stir in the well drained sausage and the cheese.
Spoon by 1/3 cupfuls into well greased muffin tins.
Bake for 20-25 minutes or intil knife comes out clean. These should be well set.
Makes one dozen.
