Coating:
2 C. fresh bread crumbs
1/2 tsp. salt
1/4 tsp. cracked pepper
1/4 tsp. onion powder
1/4 tsp. paprika
1/2 C. butter, melted
2 1/2 lb. chicken, cut up
3 med. onions, cut in half
Sauce:
1 Tbsp. flour
1 C. sour cream
1/4 tsp. cracked pepper
milk
1 Tbsp. chopped fresh chives
Heat oven to 350. Combine all coqating ingredients except butter. Dip chicken in melted butter, coat with crumb mixture. Reserve remaining crumbs & butter. n 13X9" baking pan place chicken & onions. Sprinkle remaining crumbs over onions, drizzle with remaining butter. Bake basting occasionally for 60 -70 minutes or until fork tender. Remove chicken to platter, keep warm. To make sauce, scape baking pan, pour pan drippings into 2 qt. saucepan. Stir in flour. Cook over medium heat, stirring occasionally until it bubbles, (1 minute). Reduce heat to medium. Stir in sour cream & pepper. Continue cooking, stirring occasionally, until heated through (1-2 minutes). If needed add milk until desired consistency is reached. Serve sauce over chicken & onions. Sprinkle with chives.
