    Copycat Bennigan's Sandwich

    A triple-decker ham, turkey, and cheese sandwich is dipped in a tempura-style batter; fried to a golden brown; then served with a dusting of powdered sugar and a side of raspberry preserves for dipping. The Bennigan's chain made this sandwich famous.

    3 slices whole-wheat bread
    1 slice swiss cheese (deli-style)
    3 ounces sliced turkey (deli-style)
    1 slice American cheese (deli-style)
    3 ounces sliced ham (deli-style)
    2 egg yolks
    1 cup ice water
    1 cup all-purpose flour
    1 teaspoon baking soda

    Heat 8 to 12 cups of shortening in a deep fryer or large saucepan to 375 degrees. You will need the hot shortening to be at least 4 inches deep. Make the sandwich by arranging the slice of Swiss cheese on a piece of wheat bread. Arrange the turkey breast on the Swiss cheese. Place a piece of wheat bread on the turkey. Place the slice of American cheese on the wheat bread. Arrange the ham slices on the American cheese. Top off the sandwich with the third slice of bread. Make sure the meat is not hanging over the edge of the sandwich. Press down on the sandwich with the palm of your hand to flatten it a bit. Make the batter by beating the egg yolks. Stir in the ice water. Measure the flour and baking soda into a sifter, and sift the mixture into the ice water and egg yolk. Stir with a large spoon, but don't mix it too well. You should still have many visible lumps in the batter. Slice the sandwich in half from corner to corner. Dip one half of the sandwich in the batter, while holding it together with your fingers (the batter will hold the sandwich together in the shortening). Coat the sandwich well, but let any excess batter fall off. Drop the battered sandwich half into the oil. If your pan or fryer can fit the other half of the sandwich, batter that piece and drop it into the fryer as well. If your fryer is small, you may only be able to fry only one half at a time. Fry the sandwich for 6 to 8 minutes, turning it over halfway through cooking time. It should be golden brown when done. Remove the sandwich halves to paper towels to drain. When you can touch the sandwich, slice each half in half making four pieces. Dust the sandwich with powdered sugar and serve it with a small bowl of raspberry preserves. 1 servings.
    Easy Bread Sticks

    Hot Dog Buns
    Melted Butter
    Kosher Salt
    Spice of choice: garlic, parsley, dill, or whatever you like best.
    Open the buns and cut them in half, length wise, then cut them in half again. 4 sticks per bun.

    Brush the bread sticks with melted butter, on all sides (I use alot of butter). Place in large cookie pan, not touching each other. Sprinkle with kosher salt and your chioce of spice. I usually add garlic powder and freshly ground black pepper, with a little dry parsley for color. Bake for 30-40 minutes at 300 degrees until lightly toasted. They are crispy on the outside and soft on the inside. I guess the low baking temp. is the trick. I use the cheap store brand hot dog buns. They seem to be the best. Serve with your favorite pasta dish, soup, or chili. Let me know how you like them.
    Grilled Chicken Cheez-It Wraps

    8 soft taco shells
    1 cup guacamole, prepared
    16 ounces grilled chickens, prepared
    1/2 cup tomatoes, diced
    1 cup grated cheddar cheese
    1/4 cup cilantro, chopped
    1 cup hot & spicy sunshine Cheez-It crackers, crushed

    Spread guacamole over tortilla shells. Top with remaining ingredients (except crackers). Roll up tortilla shells. Place wooden picks in wrap to keep it together and slice on bias. Serve with more Cheez-It® Hot and Spicy Crackers. Use Cheez-It® Hot and Spicy Crackers for garnish.

    Chopped Lunch Fritos Pita

    Chicken, Turkey, Ham or Roast Beef)
    4 pita breads
    8 thin slices red onion
    2 medium tomatoes, chopped
    1 jar fritos chili cheese dip
    Fritos Corn Chips

    Split pita breads in half, fill with meat, onion, tomatoes and Fritos Corn Chips. Microwave chili cheese dip. Spoon dip inside each pita.
    Fritos Cheesy Crunchy Joe's

    1 pound ground beef
    1/2 cup onion, chopped
    1 can (10 3/4 oz.) Fritos Chili Cheese Dip
    6 hamburger buns, split and toasted
    Fritos Corn Chips

    Brown beef and cook onion in skillet until tender; stir to separate meat. Drain. Add Fritos Chili Cheese Dip. Heat; stirring often. To serve, place meat mixture on bun. Top each sandwich with 1/4 cup Fritos Corn Chips. Place top of bun on sandwich.
    Warm Chicken Caesar Wraps

    8 boneless skinless chicken tenderloins
    1 cup water
    1 cup instant rice
    3/4 cup caesar salad dressing
    8 10-inch flour tortillas, warmed
    2 cups shredded lettuce
    2 medium tomatoes, chopped
    1/2 cup small seasoned croutons (optional)

    In a large nonstick skillet cook chicken tenderloins until lightly browned. Leave chicken in skillet and add water, bring to a boil. Stir in rice. Cover and remove from heat. Let stand 5 minutes or until liquid is absorbed. Stir in salad dressing. Fill each tortilla with chicken and rice mixture, lettuce, tomatoes, and croutons. Fold in sides of tortilla and roll up. Makes 4 servings.
    Leftover Stuffed Turkey Wraps

    8 ounces leftover turkey, shredded
    1/2 cup hidden valley light ranch salad dressing
    1 cup shredded mozzarella cheese
    3 tomatoes, sliced thinly
    Romaine Lettuce, Salad Mix (any kind)
    4 flour tortillas
    8-12 toothpicks

    Place tortilla on plate and put in microwave for 30 seconds. Take out and add 2 ounces of shredded turkey to tortilla. Then add 1/4 cup shredded mozzarella chesse, tomato slices, and 1 cup salad mix. Drizzle 1/4 cup Ranch on top and roll like a burrito. Insert toothpicks on sides in order for wrap to stay burrito shape and enjoy. Makes 4 servings.

    George Foreman Awesome Chicken Sandwich

    4 boneless chicken breasts
    Olive Oil
    Coarse Salt
    Fresh Ground Pepper
    Spicy Guacamole
    Swiss Cheese
    4 sandwich rolls

    Preheat George Foreman Grill. Wash and dry chicken breasts. Dip both sides in olive oil. Salt and Pepper. Place chicken on grill and grill for 5 minute on one side then flip and grill another 5 minute. Take chicken off then slice each chicken in half lenghtwise and place on bun. Top with swiss cheese, then guacamole, tomato and lettuce. Makes 4 servings.

    Applebee's Club House Grill Sandwich

    2 thick slices of french bread
    Softened Butter
    1/3 cup shredded cheddar cheese
    2 slices deli turkey breast
    2 slices deli ham
    2 slices tomato
    2 tsps. bullseye barbecue sauce

    Butter one slice of bread and put butter side down into preheated skillet, on medium heat. Spread the up side of the slice with mayo. Sprinkle on half of cheese. Heat the turkey and ham slices in the same skillet for about 30 seconds. Lay the turkey on the cheese, then the tomato. Spread bbq sauce over tomato, then lay on the ham, sprinkle the rest of the cheese over ham. Butter the second slice of bread on one side and put on top, with butter side up. The first bread slice should be brown, flip sandwich over and brown the second side for 2-3 minutes, or till golden brown. Remove from skillet, cut in half diagonally and serve with additional BBQ sauce.
    Tuna Cruncho Sandwich

    1 can (6 1/2 oz.) tuna, drained and broken up
    2 stalks celery, chopped
    1 tbsp. mayonnaise
    2 slices Swiss Cheese
    4 slices white bread
    1 egg beaten
    2 cups potato chips, crushed
    2 tbsp. butter

    Combine the tuna, celery, and mayonnaise. Place one slice of Swiss cheese on each of two slices of bread. Spread half of the tuna mixture on top of each and top withremaining bread slices. Dip each sandwich into beaten egg and then into the potato chips. Melt 2 tbsp. butter in a skillet or on a griddle. Brown sandwiches one one side and then on the other until the cheese is melted.
    Hot Tuna Hoagie

    1 1/2 cup shredded coleslaw mix
    1 9-oz can tuna drained
    2 Tbsp mayonnaise
    2 Tbsp salad dressing; buttermilk ranch, creamy cucumber or creamy parmesan
    2 Hoagie Buns split and toasted
    2-oz thin sliced cheddar or swiss cheese

    In medium bowl toss slaw mix and tuna.In small bowl combine mayo and salad dressing.Toss with slaw and tuna until well coated.Spread mix evenly between the 4 toasted buns.Broil 4-5 inches from heat for 2-3 minutes or heated through.Top with cheese slices and broil until cheese melts. I used the creamy cucumber and swiss it was a great combination.

    1 pound grilled chicken, prepared

    1 cup shredded Cheddar cheese

    1 cup Cheez-ItŪ Hot and
    Spicy Baked Snack Crackers, crushed

    Spread guacamole over tortilla shells. Top with remaining ingredients (except crackers for garnish). Roll up tortilla shells. Place toothpicks in wrap to keep it together and slice on both sides. Serve with more Cheez-ItŪ Hot and Spicy Crackers. Use Cheez-ItŪ Hot and Spicy Crackers for garnish.

    Olive Oil Bread Dip

    I love bread dipped in olive oil. This is the recipe I use.

    3 tablespoons olive oil (more or less depending on you)
    1/2 teaspoon italian seasoning
    1/8 teaspoon garlic powder
    1/8 teaspoon salt
    1/8 teaspoon ground black pepper

    Pour olive oil into flat dish. Add rest of ingredients and stir. Dip your bread and enjoy!
    Copycat of Arby's Light Roast Chicken Sandwich

    The secret is to let the chicken sit in the marinade overnight. Slice the meat as thin as you can for the right effect.

    2 tablespoons water
    1 tablespoon vegetable oil
    2 teaspoons ketchup
    1/2 teaspoon sugar
    1/2 teaspoon salt
    1/4 teaspoon paprika
    1/8 teaspoon onion powder
    1/8 teaspoon coarse black pepper
    1/8 teaspoon savory
    1/8 teaspoon garlic powder
    Other Ingredients
    2 chicken breasts
    4 teaspoons light butter, spread
    4 whole-wheat hamburger buns, cut in half
    2 tablespoons light mayonnaise
    1 medium tomato, sliced
    1 cup shredded lettuce

    In a bowl combine all ingredients for the marinade. Add the chicken breasts and let sit overnight (or at least several hours). Preheat oven to 400F. Remove chicken from marinade and onto a foil lined baking sheet. Bake 20-25 minutes, or until fully cooked. When cool enough to handle, slice as thin as you can with a knife or meat slicer. Heat a frying pan over medium heat. Put butter flavored spread onto inside of buns. Grill buns until lightly browned. To make sandwich, place 1/4 of chicken onto bottom of buns, spread mayonnaise onto tops. Spread lettuce on top of chicken then tomato slices and place top on the sandwich. Makes 4 sandwiches
