    Boy!
    I tried a slice of this meatloaf (cold) at my neighbors house this AM and it is good! She served it with a dab of hot mustard on white bread. Here is the recipe. If anyone tries it, please let me know what you think.

    PREHEAT oven to 350

    2 T. green onions, chopped fine
    2 T. carrots, chopped fine
    2 T celery, chopped fine
    1 t. dark sesame oil
    1/2 t. minced, peeled ginger-root or you can use 1/8 t. ground ginger
    2 cloves garlic, minced
    1 cup cooked rice
    1/4 cup water chestnuts, chopped
    2 T soy sauce
    2 T Szechwan hot & spicy sauce
    1 pound ground chicken
    Cooking spray
    2 T. toasted sesame seeds

    DIRECTIONS
    Heat the oil in a small nonstick skillet over medium heat. Add the green onion, carrot, ginger-root celery, and garlic. Saute 2 minutes or until tender.
    Combine green onion mixture, rice water chestnuts, soy sauce, and szechwan sauce in a large bowl, and stir well. Crumble the chicken over the green onion mixture, and mix just until blended.

    Pack the mixture into a 8X4 loaf pan coated with cooking spray. Sprinkle sesame seeds over the top.Bake for 50-60 minutes or until done. Allow to rest in the pan for about 15 minutes before serving.
    This will make about 12 servings.
    Serve with Hot mustard or sweet & sour sauce if you you like.
    Very different from you usual meatloaf.

    I'm glad that this recipe has found its way to the new boards. It has become a real favorite of mine. I mix up sort of an "Asian ketchup" as a condiment to go with it: sweet & sour sauce, Hoisin sauce, and dry mustard to make it as spicy as you like. This meatloaf is very different, and so good if you like the Asian flavors. Buckwheat, thanks for posting it to begin with!

            This was delicious! I doubled the recipe and left out the rice. I don't think I have ever made a 1 pound meatloaf, so even doubling it fit perfect in my meatloaf pan. I made the "Asian Ketchup" WiseSue mentioned and added a bit of ketchup & Szechwan seasoning to it. DH said it's a keeper & make this any time!

            I did add chopped jalapenos too! :)

            The seasonings would be great for grilled chicken "burgers!" :D
