    Mediterranean-Style Sole:
    Serves 4

    4 sole filets(about 1 1/4 lbs.)
    1/2 c.all purpose flour
    2 eggs beaten
    1 c.Italian style bread crumbs
    1 Tbls.chopped fresh sage
    1 Tbls.chopped fresh rosemary
    1/4 c.butter
    1/2 c.dry white wine
    3 Tbls.lemon juice

    Pat sole fillets dry.Coat fish with flour,dip into eggs.Coat with bread crumbs.

    Cook sage & rosemary in butter in 12" skillet over low heat,stirring occasionallly,6 minutes.
    Add fish,cook uncovered over medium heat 4 minutes.Turn fish carefully.Add wine & lemon juice.Cook about 5 minutes longer or til fish flakes easily with a fork.
