This is my all-time favorite eggplant parmesan recipe.. the fried eggplant slices stay crisp and don't get all soggy like they do in other recipes where they are floating in sauce and baked..
My kids all love this stuff..
Eggplant Parmesan
1 medium-sized eggplant
2 eggs, beaten
1/2 cup flour
1/2 cup bread crumbs
4 tbs vegetable oil
1 jar spaghetti sauce
sliced mozzarella cheese
grated parmesan cheese
Preheat oven to 350. Slice the eggplant into 1/2" thick slices and dredge in flour. Dip into beaten egg, then in breadcrumbs. Heat a skillet over medium-high heat and add the oil. Fry the eggplant slices until browned on both sides, about 4 minutes a side. Transfer to a baking sheet. Top each slice with grated parm and a slice of mozzarella. Bake, uncovered, until cheese is melted, about 10 minutes. For each serving, place 1 slice eggplant on a plate and cover with another slice. Cover with warmed spaghetti sauce.
