1 cup dry instant rice and 1 cup chicken broth OR 2 cups cooked wild rice
1 (10 oz.) can cream of chicken soup
2-3 cups cooked, diced chicken or turkey
1 cup chopped celery
1 cup mayonnaise
1 (7 oz.) can sliced water chestnuts, drained
1/4 cup chopped onion
Top with 1 cup crushed potato chips

Mix all ingredeints except topping. Put into a 3 quart casserole. Top with potato chips. Bake at 350 for 1 hour.
