I just thought I would share this with everyone. I had it in a local resturaunt, and made it at home. Its really good either way you cook it.
1 small can diced green chiles
1 lb cooked and shredded chicken brest
1 package regular cream cheese (sorry it doesnt taste the same with lowfat/fat free)
Flour tortilla shells
After cooking and shredding chicken mix with cream cheese and drained chiles. Spoon onto tortillas, and either roll up like enchaladas or fold in a chimichanga/burrito manner.
IMHO its best if you roll them up into the burrito/chimi manner and deep fry in oil until golden brown.
The other way to serve it is place them rolled up enchalada style in a baking dish and bake at 325 until lightly toasted and crispy.
