I have to apologize for the measurements on this but I wanted to share... it's just too good not to...
Ground beef and ground pork (2 parts bf, 1 part pk) usually about 2 - 2 1/2 lbs. My grocery store sells it that way.
1 sm chopped bell pepper
1 sm chopped vidalia onion
Italian style bread crumbs (I use Progresso). Don't know the amount, I just add until the meat is nice and sticky.
1 pkg meatloaf seaoning mix
1 can (8 oz) tomato sauce
1 egg
Mix all together reserving 1/2 can of the tomato sauce. Place in casserole dish, pushing flat to fill the dish. I use a 9x9. Spoon remaining sauce over top. Bake as directed on the seasoning package.
I have tried other recipes and I just really like the flavor of this. Make sure to use enough bread crumbs, that's the key to keeping it moist. Don't mean to toot my own horn... but it's to die for. The one thing I make that comes out perfect every time, even for those who don't like meatloaf.
