Pepper Steak With Rice:
3 cups hot cooked rice
1 lb. lean beef round steak, cut into 1/2" slices, sprinkkle with 1 T. paprika, let stand while preparing other ingredients
2 T. butter
2 cloves garlic, crushed
1 1/2 cups beef broth
1 cup sliced green onions, (tops and all)
2 green peppers, cut in strips
2 T. cornstarch
1/4 cup water
1/4 cup soy sauce
2 large fresh tomatoes, cut into eights
In large skillet, brown meat in butter. Add galic and broth. Cover and simmer 30 minutes. Stir in onion and green pepper. Cover and cook 5 more minutes. Blend cornstarch, water and soy sauce. Stir into meat mixture. Cook, stirring until thick, about 2 minutes. Add tomatoes, stir, serve over rice. Trim with parsley.
