My X used to take me out for dinner if he even got the hint I was going to make a meatloaf. That's how bad they were. My brother was visiting from out of town, and knew full well about Kat's Meatloaf. Well wouldn't you know, I had just made this meatloaf for dinner. He took a "skinny" piece to be nice, tasted it, and then began forking more on his plate. Anyway, here it is, thanks to Beth in Tx.
Sweet and Sour Meatloaf
1-1/2 lbs ground beef
1/2 c dry bread crumbs
1 t salt
1/4 t pepper
2 eggs
1 t minced onion
1 (15 oz)can tomato sauce, divided
Topping
Reserved tomato sauce
2 T brown sugar
2 T vinegar or lemon juice
1/2 c sugar
2 t prepared mustard
Mix atogether ground beef, bread crumbs, salt, pepper and eggs. Add onions and 1/2 of the tomato sauce. Form into loaf in 9x5x3 pan. Bake @350 for 50 minutes.
In saucepan
combine topping ingredients and bring to a boil. Pour over meatload and bake 10 minutes more.
You may want to make a double of the topping and pour over meatloaf after it is sliced.
