Beef Jerky
1/2 pound beef
1 teaspoon liquid smoke
1 teaspoon garlic powder
1 teaspoon pepper
1 teaspoon meat tenderizer
1 teaspoon onion powder
1/4 cup soy sauce
1/4 cup worcestershire sauce
Trim fat from meat and slice into 1/4 inch strips. Combine remaining ingredients and pour over meat slices. Refrigerate overnight turning occasionally to throughly coat. Remove meat from marinade and drain on paper towels. Place strips directly on oven rack (place cookie sheet or aluminum foil under rack to catch drips). Roast meat at 120 degrees for 8 - 12 hours with oven door slightly ajar. Check often and do not let meat become crisp. Cool and store in airtight container. I suppose a food dehydrator would work too but I don't have one so I don't know.
The pepper makes it kind of hot and I usually don't even put it in.
I know this is time consuming but well worth it especially when the prices at the store for jerky are so outrageous.
