An old family favorite. Serve over fettucini, with a big salad and crusty french bread for mopping up the sauce.

Chicken and Peppers

3 chicken breasts grilled and cut into bite sized pieces.
1 each red yellow and green bell pepper sliced
3 cloves of garlic minced
1 small onion diced fine
2 tomatoes peeled chopped fine
2 tsp olive oil
Saute the veggies in the oil until just tender then add chicken.
Sauce
2 cups cream or half and half
1 tbsp tomato paste
1 1/2 c shredded parmesan cheese
1/2 stick of butter

Combine all and heat until cheese is melted. Pour over chicken mixture and serve on top of a pile of fettucine.
