Wisconsin Cheese Soup I

5 TBS margarine
2 carrots, chopped
1 green pepper chopped (I replace with 1 C seeded, diced tomatoes - Jo)
1 onion, chopped
5 button mushrooms, chopped
1/2 C diced ham
1/2 C flour
2 TBS cornstarch
4 C chicken broth
4 C milk
1/2 tsp paprika
1/4 tsp cayenne pepper
1/2 tsp dry mustard
2 C shredded sharp Cheddar cheese
salt, and pepper
Saute vegetables and ham in margarine, until crisp-tender, about 10 minutes. Don't brown. Add flour and cornstarch and stir constantly about 3 minutes. Add broth and stir constantly until slightly thickened. Add milk, paprika, cayenne, mustard. Add cheese gradually, stirring until melted. DO NOT BOIL. Season to taste.
