BBQ Pork Sandwiches
2 cups diced or shredded leftover pork roast
1 1/2 cups bbq sauce
4 large sandwich rolls
1 stick butter (or margarine) softened
2 tsp garlic powder
2 tbsp olive oil
1/4 cup parmesan cheese
8 oz pepper jack cheese, thinly sliced
Combine pork and bbq sauce and heat, covered in oven or in saucepan. Set aside. Combine butter, garlic, olive oil and parmesan. Cut rolls in half lengthwise and scoop out some of insides. Spread with garlic/butter mixture and toast under broiler until golden brown. Top each half of rolls with some of pepper jack cheese slices. Top bottom half of roll with about 1/2 cup of pork/bbq sauce mixture. Put roll halves together, wrap in foil. Bake at 450 about 12 minutes until cheese is melted.
