    There are two very different recipes for corned beef patties here.

    Corned Beef Patties I

    3 C cooked, riced/mashed potatoes
    1/2 C shredded swiss cheese
    2 C minced cooked corned beef
    1/4 C tomato puree
    1 tsp salt
    1/2 tsp pepper
    4 eggs, beaten
    dry bread crumbs
    1/4 C EACH bacon drippings and butter, or just 1/4 C vegetable oil

    Combine the first six ingredients. Add 2 eggs, mix well. Shape into patties and chill thoroughly. Dredge patties in flour, dip in remaining 2 eggs. Coat well with bread crumbs. Melt butter and drippings/oil in frying pan over medium heat until hot. Fry patties slowly until browned on both sides.
    Serve as entree.

    Corned Beef Patties II

    1 can corned beef, shredded
    1 TBS shredded or finely minced onion
    1 egg, beaten
    1/2 slice white bread, crumbed
    3 TBS oil

    Mix all ingredients except oil. Shape into 4 small or 2 large patties. Heat oil over medium heat in frying pan. Cook until brown on both sides. Serve as entree or on burger buns with lettuce, tomato and mustard.

    The first time she posted this I said the first one looked good - how much do you want to bet it's upstairs in that "to try" pile! LOL :D
