The Alfredo Sauce post reminded me of this dish. Since I make the same Alfredo as BBQ Guru (almost anyway) I’m posting his Alfredo sauce to this dish we make.
Tortellini Alfredo with Smoked Scallops, Peas, and Sundried Tomatoes
1 pint Heavy cream
1 stick Butter
2 tablespoon(s) Cream cheese
3/4 cup Parmesan cheese
1 TBS fresh chopped garlic or 1 tsp. garlic powder
3 or 4 smoked scallops per person
2 - 3 TBS sundried tomatoes
1/4 to 1/2 cup frozen peas
Capers for finishing plate if desired
Simmer cream, butter and cream cheese until melted, stirring constantly
Add parmesan and garlic powder and simmer for about 15-20 minutes on low OR until the cheese begins to brown just slightly. About 10 minutes before it’s done add the cooked Andouille sausage, frozen peas and sundried tomatoes.
Season with a little salt and pepper if desired. Top each bowl with the cooked smoked scallops and add a tablespoon of capers if desired.
