Sugar Pie's Fancy Cabbage Casserole
1 small head cabbage, thinly sliced
1 small onion, cut in half then thinly sliced
3 Tbsp.butter
3 Tblsp. all-purpose flour
3 cups milk
1 tsp. salt
1 tsp. pepper
1 cup shredded cheddar cheese
1 stack Ritz crackers, crushed
Preheat oven to 350ºF. Grease a 9”x13” casserole dish. Place cabbage and onion in a large bowl, tossing to combine.
In a pan, heat butter, whisk in flour. Blend well, and whisk in milk. Season with salt & pepper. Remove from heat & stir in cheese. Pour sauce over cabbage & onion. Spoon into casserole dish & top with cracker crumbs. Cover tightly w/ foil and bake for 45 minutes; remove foil and bake another 15 minutes.
