    Chicken Pesto w/ Pasta

    I renamed this recipe.. Came form Nov. 2007, BH&G.. it was called Chicken with Parmesan Noodles..

    1 -9 oz. pkg refigerated angel hair pasta
    4 large carrots, thinly sliced ( I USED ONLY 3)
    2 T. butter (I used 4T)
    1 1/2 lb. boneless chix breasts, cut in 1 inch cubes
    1/4 cup purchased basil pesto
    1/4 cup finely shredded Parmesan cheese
    Olive oil (optional)
    Fresh basil (optional)

    My additions:
    Onion Powder
    Emeril's italian seasoning

    Cook pasta

    In large skillet add 1 T. butter and saute carrots about 3 mins. (I added salt and pepper to this)

    Add chicken and cook & stir 4-5 min
    (I added another T. of butter to pan.. I sprinkled the chicken with salt, pepper, onion powdered and italian seasoning)

    As soon as chicken is cooked..

    Add pesto to chicken. Toss well.

    Drain pasta, Return to pan; toss with remaining butter.

    Serve with chicken mixture.

    Sprinkle with Parmesan cheese and ground black pepper.
    Drizzle with olive oil and top with fresh basil
