    Coll's Reuben Sandwich Casserole

    1 can sauerkraut or fresh, drained very well
    2 medium tomatoes, sliced & seeded
    8-12 oz. corned beef, sliced
    2 C Swiss Cheese, shredded
    1 8oz bottle Thousand Island Dressing
    4 slices rye bread, toasted

    Preheat oven to 400°
    Spray an 8x8 casserole with non-stick spray

    Layering from bottom to top:

    Sauerkraut, tomato slices, corned beef slices and top with cheese.
    Bake uncoverd for 20-25 minuts until cheese is melted and bubbly.
    Cool for 5 minutes before serving.
    Cut into 4 sections and serve open face on toasted rye bread. Top with Thousand Island dressing.

    I like to make mini-Reubens as hot appetizers for parites. Take the little rye party bread (about 1½" square) adn spread w/ a tsp. of 1000 Isle dressing, add a shaved slice of corned beef just kind of balled up and placed on top, top w/ a tsp. of drained kraut, then 1/4 of a slice (cut square slice into 4 suares) of swiss cheese. Run under the broiler about 3 minutes and serve when cheese is melted. Garnish serving platter w/ a sprinkling of caraway seeds.
