    My friend gave me this recipe to try for our club meeting last night and it was a BIG HIT! They scraped the sides of the dish clean! Lot of steps, but worth the effort.

    MR. BLUE LAKE CASSEROLE

    1 (14.5 ounce) can Blue Lake green beans
    (Do not use unsalted)
    2 cups diced yellow squash (about a pound) or one 16 oz. package frozen yellow squash
    1 t. salt (divided
    2 eggs, seperated
    1/4 cup butter
    1/4 cup flour
    1/8 t. dry mustard
    1/8 t. ground nutmeg
    1/8 t. white pepper
    1 cup milk
    1 t. fresh lemon juice
    1/2 cup slivered almonds (optional)

    PREHEAT oven to 350 degrees. Grease 8 (6 ounce) custard cups or a 1 & 1/2 quart casserole dish

    DIRECTIONS
    Drain bean liquid into a saucepan. Add squash and 1/4 t. of the salt.
    Cover and cook 10 minutes.
    Meanwhile, beat egg yolks lightly in a bowl. Melt the butter in another saucepan; stir in flour, remaining salt, mustard, nutmeg and pepper.
    Gradually add the milk to the butter mixture. Cook until thickened, stirring constantly. Slowly add beaten egg yolks.
    Add green beans, squash and lemon juice. Beat egg whites until stiff. Add almonds and fold the mixture into the vegetables.
    Spoon into custard cups or casserole. Place on baking pan. Pour hot water into pan until it is halfway up the cups or casserole dish.
    Bake custard cups for about 30 minutes, casserole for about 50 minutes.
    CHeck for doneness by sticking a knife in the center. If it comes out clean, the souffle's are done. Serve immediately. Makes 8 servings.
