Last weekend went to my to a friends house for dinner. She made the best dinner I've had in a long time.
Spinach Salad with Strawberries and a Lemon Chicken, which I cooked last night and was a huge hit! (took me 30 mins. to prepare and 40 mins. in the oven...I actually turned the oven to warm as DH wasn't home and it sat there for another 15 mins...)

Lemon Chicken

3 skinned and boned chicken breast cut in half
1/2 cup butter
1/2 cup oil
2 eggs beaten (did not add water..it's just the eggs beaten)

Trim chicken.

Cut chicken breast in half...pound nice and flat

Heat butter and oil together in skillet.

Dredge chicken in flour (mixed with salt and pepper to taste).
Shake of excess flour..

Dip in eggs

Saute in hot fat until golden on both sides.

Drain on paper towel.

1/4 cup butter
1 t. minced garlic
1 t. minced shallot
1 T. flour
1 1/2 cups chicken broth
1/2 cup Marsala wine (this is what makes it!)
juice of 1 lemon

Melt butter in saucepan. Add garlic and shallots. Saute a minute. Add flour, stirring contantly. DO NOT ALLOW MIXTURE TO BROWN
Add stock and Marsala... continue to stir until smooth and slightly thickened.
Add lemon juice.

Preheat oven to 375.

Place chicken in a shallow baking dish. Pour sauce over and bake until tender (30 min)

Sprinkle with fresh parsley and add fresh lemon slices when serving.
