    Oatmeal Pancakes

    2 cups milk
    1 1/2 cups rolled oats
    2 eggs
    1/2 cup oil
    3/4 cup flour
    2 Tbsp sugar
    2 1/2 tsp baking powder
    1 tsp salt

    Pour milk in bowl, add oats and let sit for 2 minutes. Combine all dry ingrediants in a bowl and set aside. Add eggs, slightly beaten and oil to oat mixture, stir with a wire whisk until blended. Add dry mixture a little at a time and stir with wire whisk to blend. Heat skillet or griddle to 400 degrees and pour about 1/4 cup batter onto skillet (non-stick or oiled)
    Wait for edges to firm and pancake to bubble then turn..

    I substitute, applesauce for oil, egg substitute for eggs, and Splenda for sugar to make it lower fat and cholesterol...these are yummy and stick with you through the morning...my children have always loved them....
