Smothered Pork Chops
6 center cut chops (or whatever)
1 cup flour
4 T. oil
1 onion cut into rings
2/4 cup water
1/2 cup red bell pepper, sliced
1/2 cup green bell pepper, sliced
4 cloves of chopped garlic
1 T. parsley
1 t. Creole seasoning
Salt & pepper the chops. Coat the chops with flour and shake off the excess, then brown the chops in a skillet in the oil. When browned, add the onions and cook for a few minutes, then add the water,creole seasoning. Allow to simmer a few minutes, then add the bell peppers, garlic & parsley. Cover, and simmer until done. Great with rice or mashed potatoes.
