  • Baked Steak Burritos by MrsMo

This is from the 2002 Pillsbury Cook Off. I had some leftover steak and used it. (I know, leftover steak in my house? Eek) I just tossed the sliced cook steak to coat in the seasoning mixture then baked 20 minutes to make sure the meat got heated through. I served with the RoTel Dip, taco sauce and sour cream. They ate all of them!

    Baked Steak Burritos

    1/2 cup butter
    1 package taco seasoning mix
1 1/2 pound boneless sirloin tip steak, cut into thin bite sized strips
1- 16 ounce can refried beans
12 flour tortillas (use 8 inch size)
    2 cups shredded cheddar cheese
3 green onions, thinly sliced or 1 small red onion chopped
1- 10 ounce can enchilada sauce
1 cup shredded mexican cheese blend

    Heat oven to 400.
Melt butter in large skillet over medium heat. Stir in taco seasoning mix. Add beef strips, cook and stir 5 to 6 minutes or until of desired doneness. Heat refried beans in microwave for 2 minutes. Spread each tortilla with refried beans to within 1/4 inch of edge. Top each with beef, cheddar cheese and onions. Roll up, folding in sides. Place seam side down in ungreased 13x9 pan. Pour enchilada sauce over burritos, sprinkle with mexican cheese blend. Bake 7 to 12 minutes or until burritos are thoroughly heated and cheese is melted.
