    Got this recipe years ago off of the back of a Lipton's Chicken Noodle Soup
    package, great when you have the "I don't know what I want for supper, just make something simple" blues.

    CHINESE FRIED RICE WITH SHRIMP and EGGS

    1/4 salad oil (I also like peanut oil, tastes better with sea food I think)
    1 cup raw regular or processed white rice (I use Uncle Ben's)
    1 envelope Lipton's Noodle Soup Mix w/ Real Chicken Broth
    21/2 cups boiling water
    1/2 pound fresh shrimp, shelled, cleaned and cut up, I use (1) lb. Medium shrimp cut in half,(unless you use the tiny shrimp)
    2 eggs, slightly beaten
    1/4 teaspoon salt
    Few grains of pepper
    11/2 Tablespoons soy sauce
    2 small scallions, sliced (hint: use sissors or kitchen shears to cut up scallions about (1/4in.)long...easier)

    1. In a large skillet, heat 2 Tablespoons salad oil and saute rice until golden brown.

    2. Combine soup mix and water and stir into rice. Cover and simmer 30 minutes or until liquid is absorbed.

    3. In another skillet, heat remaining oil and saute shrimp quickly about 1 minute. Add eggs, stirring constantly and cook 1-2 minutes. Add salt, pepper and soy sauce.

    4. Stir shrimp-egg mixture into soup-rice mixture, heat 2-3 minutes.

    5. Serve topped with scallions. (I just add the scallions into the dish a the end and serve)
    3-4 Servings. Enjoy!
