    This is a recipe from work, can't tell what cookbook it came from but my family liked it.

    3 patties (3 oz. each) nonfat hash brown potatoes, defrosted
    1 Tablespoon canola oil
    1 Tablesp. tub margarine
    4 oz. lean ham, in 1/2 inch cubes
    1/2 medium onion, chopped
    1 medium green pepper, chopped
    1 cup egg substitute
    1/4 tsp lite salt
    black pepper to taste

    Pour oil into a very smooth or nonstick unheated skillet. Do not preheat oil. Add hash browns, heat over med. heat. After oil begins to bubble around edges, fry undisturbed for 5 min., turn, fry for 3 minutes, remove from skillet. Melt margarine in same skillet, add ham & cook 4 min. Stir in onion & green pepper; cook 3 min. Add back pre fried potatoes, stir & heat together 4 min. Pour on egg substitute, sprinkle with lite salt & pepper. Stir occasionally from outside edge to center allowing uncooked egg to flow to bottom of skillet. Cook untill egg is set but still moist. Makes 4 servings.
