    CRUNCHY CHICKEN SURPRISE

    (Melted cheddar cheese, scallions and a dash of jalepeno rolled in a crunchy chicken breast.)

    Ingredients:

    2 - Chicken Breasts (Medium-Large) - Pounded
    2 - Tbsp. Softened Butter
    3/4 - Cup Shredded Cheddar Cheese
    3+ ("Jar Rings Slices") Jalapenos
    2 Scallions diced
    1/8 Tsp. Pepper
    1/8 Tsp. Salt

    Toothpicks

    2 Cups (crumbled well) Corn Flakes (This is the cereal - crushed up by hand).

    2 Tbsp. Parkay Squeeze Butter or regular softened butter


    DIRECTIONS:

    Flatten the two chicken breasts well with mallot.

    Combine 2 Tbsp. softened butter with the grated cheddar cheese, diced jalapenos, scallions, pepper, and salt, in a bowl, by hand, with a fork.

    Using half the mixture for each breast, "press firmly" the cheese mixture to the top upper half (widest end) of both breasts.

    Starting at mixture end - roll or fold up the breast the best you can, being sure to push in mixture as you go and fasten with one or more toothpicks. Place the chicken on to a glass pie dish.

    Smooth remaining 2 Tbsp. of softened butter to the tops and sides of the breasts and top with crushed corn flakes - pressing them into place on top and sides best you can. The more butter you use here the better they stick -- also the more "crushed" the flakes are the easier it is for them to hold. "Parkay squeeze" style a good butter to work with. A generous amount of the corn flakes will fall into the dish which is fine, add all of it and use it later after your cut the breast up on your plate.

    Bake at 350 for 35 - 40 minutes until fully cooked. Varies slightly by breast size.

    Serve the chicken with the extra corn flakes all around and any melted cheese that remains in the dish.
