  • Pork and Bean Meat Loaf by Midsouth~Mom

    I found this in one of my mothers old cookbooks. I haven't had the chance to try it yet. I was curious if anyone else had tried it or even heard of it before??????



    PORK AND BEAN MEAT LOAF

    1 egg
    1 1/2 tsp. salt
    1/4 tsp. pepper
    1 tsp. lemon juice
    2/3 cups oats
    1 can pork and beans
    (drained and liquid retained)
    1 lb. ground beef
    1/4 cup chopped onion


    GLAZE;

    Liquid from pork and beans
    1/2 cup ketchup
    2 Tbs. brown sugar


    Mix all meatloaf ingredients well and place in loaf pan. Combine glaze ingredients and pour over the top. Bake at 375 for 35 to 45 minutes.
    Cool before cutting.

    I made this meatload this past weekend and it is soooo good! Thanks for sharing it! I passed it along to my family and they're anxious to try it too!

      I made this today because I had a lot of P&B's on hand from a sale.......it made a nice, moist meatloaf and the topping was good. I would put more spices in the loaf the next time, though (chili powder, garlic, worchestershire, etc.)
