Kid Friendly Hamburger Pie
1 medium onion, chopped
1 pound ground chuck
Salt and pepper to taste
9-inch frozen pie shell
5 slices Velveeta, about 4 to 5 ounces (we used 2 cups Kraft packaged shredded sharp cheddar)
16.3-ounce can flaky biscuits
OPTIONAL: small can of corn or green beans, drained
Preheat oven to 400°. Get pie crust out of the freezer to start thawing.
Cook ground beef and onion in a large skillet on medium heat, breaking up the beef lumps with the back of a spoon, and cook until onions are soft. Drain excess fat and season with salt and pepper to taste. (If adding a small can of corn or green beans, now is the time to do it. Drain first.)
Put meat mixture into the pie shell (it comes in its own pie plate) and evenly distribute the cheese over the top.
Separate biscuits and layer in a circular pattern over the pie, covering it completely (you may not need all the biscuits). Cut a few small "steam slits" into the top and bake about 20 minutes until golden brown and hot. Serves 4.
Note: If you forgot to buy a pie shell, put the meat mixture in a casserole, top with biscuits and bake for 15 minutes.
