  • Chinese Casserole

    I've posted this a long time ago, but I've done some revisions since then. My kids really like this dish.

    1 lb ground beef
    1 (10 1/2 ounce) can cream of mushroom soup
    1 (10 1/2 ounce) can cream of chicken soup
    1/2 cup water
    2 tablespoons soy sauce
    1 to 1 1/2 tsp ground ginger
    1 cup sliced fresh mushroom or 1 (8 ounce) can mushroom (optional)
    1/2 cup sliced celery
    1 medium onion, coarsely chopped
    1/2 c. cooked broccoli
    1/2 c. cooked carrots
    1/2 cup white rice, cooked
    1/4 pkg chow mein noodles, crisp
    Brown meat, celery, and onions in skillet. Drain.
    In a bowl, combine the hamburger mixture with the rest of the ingredients except for the chow mein noodles.
    Stir well and pour into a 2 quart casserole.
    Cover and bake at 350 degrees for 15 minutes.
    Uncover and sprinkle noodles over top and return to oven and bake an additional 10 minutes.
