  • King Ranch Chicken Casserole

    Old-School King Ranch Chicken Casserole

    Ingredients:
    1 cooked 2 1/2 pound fryer (cooked with cumin, onion, celery and garlic) shredded
    10 corn tortillas
    1 onion, chopped
    1 bell pepper, seeds and stem removed, diced
    2 cups of grated cheddar cheese
    1 can of cream of mushroom soup
    1 can of cream of chicken soup
    1 cup of chicken broth
    1 can of Ro-Tel tomatoes
    1 tsp. of chile powder

    Method:
    1. Preheat oven to 350 degrees.
    2. Combine soups, broth, Ro-Tel tomatoes and chile powder; blend until smooth.
    3. Place a layer of chicken in a greased casserole dish.
    4. Add layers of tortillas, onion, bell peppers, cheese and sauce.
    5. Repeat layers, ending with cheese.
    6. Bake uncovered for half an hour or until brown and bubbling.

    We absolutely LOVE King Ranch Casserole! I remember clipping out a recipe years ago from a magazine and making it.

      We love KR Casserole too! I've got a dozen or so of these recipes (the crock-pot version sucks), but this one sounds like a keeper!

        Would it matter much if I used flour tortillas? I really don't like the corn ones. I have read this recipe for years and never gave it a shot, but I'd like to.

          Personally, I think it matters a lot. Flour tortillas would get gummy and doughy whereas corn would hold up a lot better. King Ranch Casserole is so good, it's worth making!

            Here's another version from www.allrecipes.com that I recently made. Using tortilla chips was a nice twist because even the corn tortillas tend to get soggy in all the liquid, but the chips stayed crispy.


            King Ranch Chicken Casserole


            1 (3 pound) chicken, boiled and deboned
            1 (14.5 ounce) package tortilla chips
            1 (10 ounce) can diced tomatoes with green chile peppers
            1 (10.75 ounce) can condensed cream of chicken soup
            1 (10.75 ounce) can condensed cream of mushroom soup
            1 onion, chopped
            3 cups shredded Cheddar cheese

            Preheat oven to 300 degrees F (150 degrees C.) Layer the chips in a 9x13 inch casserole dish. Combine the tomatoes, chicken soup, mushroom soup and onion. Pour half of mixture over chips. Layer the chicken pieces, half of the cheese and the remaining soup mixture. Bake at 300 degrees F (150 degrees C) for 20 minutes. Top with the remaining cheese and return to the oven until the cheese is melted.
